Vegan-Friendly Soba Noodle Bowl Now on the Menu at Panera Bread

In keeping with the “bone broth” trend, Panera Bread rolled out a few new noodle bowls. While most include meat or eggs, one of the bowls is a Soba Noodle Bowl with Edamame — and it’s vegan.

The bowl is made with Soba buckwheat noodles, fresh spinach, napa cabbage, roasted mushroom and onion, fire roasted edamame, sesame seeds and cilantro in an umami soy-miso broth. 

It’s savory, hot, and super yummy! And you can pair it with some French baguette if you’re into dipping action. 

If you’re wondering what else Panera has that’s vegan, the list includes:

Now all we need is for Panera to add some vegan butter, mayo, cheese, and deli meat to the menu (and maybe some cream cheese and a pastry or two?) and it’ll be FIRE!

    • Hi Miranda! That is interesting! Those must be the only items they're comfortable officially designating as vegan. As the company rep told me, they were uncomfortable using that term because they don't have a process in place to guarantee the purity of ingredients. They use shared equipment, etc. Going by the list of ingredients, however, it is vegan-friendly -- so we went with that! :)

  • Had this for lunch today and it was super yummy! Great to know there are more and more veggie & healthy choices out there!

    • Just found out the hard way that this has been removed from the menu. Went there yesterday, it's gone. They confirmed they will not serve it anymore. Which really, really sucks because it was delicious. Was eating this once a week...

  • I can't believe that Panera got rid of this item. I went to Panera yesterday thinking I'd get a broth bowl and ended up with a watery bowl of black bean soup.........again. I thought they might be moving toward at least offering a few items I could order off the menu with no animal products. But no, a few items I can remove ingredients from if I want to cobble together a relatively unsatisfying meal and that's it. I suppose I could order bread and hummus but I could get more for my money stopping at a grocery store and eating in my car.

  • Panera needs to wake up and join the many other chains that are starting to offer Vegan and Vegetarian options on their menus because if they don't, they are going to get left behind on their growth and success. Many people are turning over a new leaf and are looking for healthier options.

  • I just went and got this today (2/4/19) at my local store (Colorado Springs) so it isn't discontinued Panera-wide...must just be certain locations.
