Vegan Head Chef Creates Plant-Based Options at Indiana BBQ Joint
Muenster, Indiana’s True BBQ may look like your average barbecue joint—with plenty of beef brisket and pork shoulder to go around—but this unique spot also offers an extensive vegan menu, thanks largely to head chef Adam Brown.
The options include a pulled BBQ seitan sandwich, smoked vegetables and potatoes and a smoked tempeh burger, plus regular specials like vegan risotto and a vegan Reuben.
Make no mistake, it’s a carnivorous restaurant, but the vegan section of the menu is getting increasingly longer.
The new additions came about because Brown and his wife were sick of having to trek to Chicago for vegan food, he told the Chicago Tribune.
“We would go someplace here, ask about their vegan options and be told, ‘Well, we can take the cheese off,'” Brown told the paper. “Now, my wife comes in here and is thrilled to be able to order and have it be exactly what’s on the menu.”
Plant-based options at Indiana BBQ Joint like this may seem unusual, but it’s all about “good food for both crowds,” say Brown and manager Matt Doran.
