Kite Hill Releases Vegan Ricotta Cheese

Kite Hill, maker of artisanal nut milk cheeses (and, more recently, cream cheeses), is now in the ricotta business. This is the fifth specialty item released by the company, whose products are exclusively available in Whole Foods.

The new vegan, dairy-free cheese can replace standard ricotta in all recipes. White pizza, anyone? According to Kite Hill, it’s also excellent in cheesecakes, pasta fillings or as a mascarpone substitute.

As far as ingredients for the vegan ricotta, the list is short: almond milk (water, almonds), salt, enzymes and cultures.

Ahead of the ricotta, Kite Hill released soft fresh original, soft fresh truffle dill and chive, and soft ripened cheeses—plus plain and chive cream cheese style spreads.

The ricotta’s price is $7.99 for an eight-ounce cup, and it’ll be available in Whole Foods nationwide as of June 22 (and July 1 for Florida).
