Food Companies Considering Egg Alternatives in Midst of Bird Flu

In recent weeks, the bird flu has taken a devastating toll on America’s egg-laying hens. According to the Wall Street Journal, avian influenza has resulted in the deaths or slaughter of at least 38.9 million innocent birds.

If there’s one positive outcome to this horrific tragedy, it’s that many major corporations are now considering egg alternatives to meet their production needs.

Yesterday, the New York Times reported that Hampton Creek, manufacturer of eggless Just Mayo, Just Cookie Dough and (soon) Just Scramble, had received inquiries from at least eight different companies.

“Everyone is worried about a shortage of eggs,” Josh Tetrick, chief executive of Hampton Creek, told the New York Times.

The company shipped tens of thousands of pounds of its Just Mix powdered egg substitute to General Mills, the paper reported. General Mills uses eggs in a whole host of products, from Betty Crocker cake mixes to cookie doughs.

This scenario begs the question: why would any company use a live animal, susceptible to disease and expensive to keep, when they could use a powdered mix, made from plants? The answer is obvious.
